01 / ABOUT THE PLACE

About this place

Start by taking a plain bite of the thin, straight noodles resting in slightly viscous bonito and kelp dashi water. A sprinkle of the accompanying seaweed salt then draws out the aroma of the wheat, before you finally dip them into the clear dipping broth—this evolving sequence is the core pleasure of the signature Katsuo Konbunsui Tsukemen at Tsukemen Kinryu in Kanda Tsukasamachi. Coated in savory dashi, the noodles slide down smoothly, paired with a dipping broth that is refined and crisply defined.

Tsukemen noodle portions can be adjusted to your appetite from 250 grams up to 400 grams, making it a reliable stop when you want a hearty meal. The lineup also features Tsuke Tantan with an appetizing sweet-savory dipping broth, as well as hot ramen options familiar from affiliated shops, such as Shiro Dashi Ramen and Sansho Ramen.

Pairing Wontons and Rice Dishes

The generous side menu adds another dimension to the meal. Plump shrimp wontons and meat wontons can be ordered individually or as an assorted platter, adding substantial satisfaction when paired with a bowl. Adding a bowl of fragrant chashu rice or enjoying seasoned extra noodles tossed in tare and oil—either as they are or dipped like tsukemen—are equally tempting combinations.

Inside, the calm space is centered around counter seating, creating an unhurried setting that is easy to visit on your own. The shop operates for both lunch and dinner services, and payment is accepted in cash only. It is an address to keep in mind whenever you want to appreciate the delicate balance achieved between dashi and noodles.
